With squared edges, this geometric shape is an Abruzzese specialty traditionally made with a wooden frame strung tightly with wires called a chitarra (literally "guitar"). After pressing the dough into the wires using a rolling pin, the pasta maker strums the strings as if they were playing a guitar to shake the finished pasta loose. While it remains a favorite in Abruzzo, spaghetti chitarra has found fans across Italy for its ever-so-slightly rough texture and hearty versatility.Organic Nodi Marini Pasta: Our organic nodi marini ("sailor's knots") are loosely twisted coils of pasta, so named because they resemble the complicated rope knots that all sailors must know. One of Giada’s favorite shapes, she discovered it on a trip to Italy and was determined to bring it back to the U.S.! In Puglia, it’s sometimes known as molloni (“springs”), while in parts of Naples it’s known as vesuvio, in honor of the great volcano Vesuvius that towers over the region.
